A quick elder fritter recipe.
- Pick some shanked elder flowers, turn and shake them upside down.
- Prepare a very soft batter stirring wheat flower with some sparkling white wine or water (it has to be very cold), a pinch of salt, a "zic" (very little pinch) of yeast.
- Heat some seeds oil in a pan. Plunge the flowers into the batter and then into the frying oil.
- Drain them over a piece of kitchen paper and
- serve them warm an dusted with sugar.
