italian elder fritter



To my friends in Jyderup, Hamilton, Lathen, Kiev and all the others around by the world.


A quick elder fritter recipe.



  • Pick some shanked elder flowers, turn and shake them upside down.

  • Prepare a very soft batter stirring wheat flower with some sparkling white wine or water (it has to be very cold), a pinch of salt, a "zic" (very little pinch) of yeast.

  • Heat some seeds oil in a pan. Plunge the flowers into the batter and then into the frying oil.

  • Drain them over a piece of kitchen paper and

  • serve them warm an dusted with sugar.
